Easy Ricotta Tomato Toast

See above for wine pairing ideas!!! Creamy ricotta spread over toasted Ezekiel bread and fresh tomatoes tossed in olive oil and balsamic, it's delectable. A simple way to use those extra tomatoes from the vine or even in the off season to spice up your lunch routine. It's easy to make and full of nutrients with the added bonus of protein.
